Kodubale | Ring Muruku recipe


Kodubale is a delicious snack from the cuisine of Karnataka. It is an oval shaped ring muruku prepared from rice flour, roasted Bengal gram flour and butter. Kodubale is prepared especially on the occasion of Krishna Janmashtami at my home as a naivedyam to lord Krishna.  This is one of my favorite snacks and I love munching it whole day.
The name of this snack is obtained from its shape. There is variety of recipes in the preparation of dough. But among all I like this recipe which I got from one of my uncle. I am thankful to him for giving this recipe.

Ingredients:

Rice flour 2 cups
Roasted Bengal gram/Putani/Hurikadale Powder ¼ cup
Butter 4 tbsp
Milk unboiled as required
Cumin seeds 1 tsp
Chilli Powder 2 tsp (Optional)
Oil for deep frying
Salt to taste

Instructions:

1.Take a mixing bowl and add rice flour, roasted Bengal gram powder, salt and butter and mix well without adding water. Set aside for 15 minutes.



2.After it has been rested add cumin seeds and chilli powder, further prepare a chapathi consistency dough by adding raw milk.



3.Knead the dough well and keep aside for one hour. After one hour take big marble sized dough in hand and roll it between your palms like a rope which is approximately 2 inches.

4.Join both the ends and shape it like a oval shaped ring. Shaping of kodubale is bit time consuming and you should have little patience.

5.Meanwhile heat a kadai with oil for deep frying. Once the oil is hot enough reduce the flame to medium. Leave kodubale one by one into oil and fry them evenly by flipping occasionally.



6.Remove the fried kodubale onto absorbent paper when they are golden. You can store these in an airtight container for many days and it is one of the tasty snack to enjoy with a cup of tea.

Note:

1.Excess use of butter can break your kodubale’s while frying resulting in blasting of oil everywhere.
2.I have prepared roasted Bengal gram powder at home. You can use store bought one too.
3.The kodubale's will not be much crispy when it is hot. Allow it to cool completely and then you can enjoy crispy kodubale's.
