Sabudana Vada / Sago Vada








Sabudana Vada is a traditional Maharashtrian snack dish served along with chutneys or sweet curd. This dish is a best option to have when fasting. Usually people prefer this nutritious snack when they have fasting or vrat or upvaas during navaratri and Shravana Masa. This snack is crispy from outside and soft from inside. This is also one of the famous street food in Mumbai and other parts of Maharashtra.

For Curd & Peanuts Chutney :
Thick Yogurt
दही

Preparations:

1)Rinse sabudana two to three times using water and soak for 3 hours. The water level should be just 1 inch above the sabudana.
2)It should be really soaked well. Take one sago and press gently it should be soft and separate from other. Drain sago and set aside.




3)Boil potatoes and mash really well and keep aside.
4)Heat a pan and dry roast the peanuts in a very low flame till they are roasted well. This will take atleast 15 minutes.
5)Allow peanuts to cool and coarsely grind them without adding water.




6)Transfer the mashed potatoes into a bowl and add chopped green chilli and cumin seeds. Also add grounded peanuts and salt. Mix well till the mixture is well combined.




7)Now keep adding little portion of drained sabudana and keep mixing. If you add all the sabudana at once you will find difficult in mixing.




8)Take a big lemon size mixture into your hand and shape into flat round vadas. If the mixture gets stick to your hand while shaping you can wet your hands with water and then take mixture into your hands. Repeat this procedure for the left over mixture.
9)Heat oil for deep frying and leave flat round vadas one by one onto oil. Do not flip immediately. When one side of the vada becomes crisp flip and fry the other side.



10)Remove onto absorbent paper when it is fried and serve with sweet curd or green chutney or curd Peanut chutney.
11)For the Curd peanut chutney add roasted peanuts into blender grind till coarse mix. Add thick yogurt, green chilli, sugar and salt and grind again along with peanuts coarse mix without adding water.
