This is dhaba style recipe of chole which I like to have particularly
with hot bhature’s. Even though I am a south Indian I love most of the Punjabi
dishes which are rich in texture and flavor. This recipe is very easy to
prepare specially for the bachelors who try their best to cook good food
themselves. Also you can add this to your menu for the special guests and for
the kitty parties.

Ingredients:
Chickpeas 1 cup
Onion 1, finely chopped
Tomatoes 2, finely chopped
Ginger garlic paste 1 tsp
Bay leaf 1
Cinnamon Stick 1 inch
Fennel seeds 1 tsp
Kashmiri red chilli powder 1 tsp
Turmeric Powder a pinch
Coriander Powder 1 tsp
Cumin Powder ½ tsp
Garam masala powder ½ tsp
Chole masala powder 1 tsp
Oil 3 tbsp
Coriander leaves for garnishing
Lemon juice ½ tsp
Water as required
Instructions:
1.Soak chickpeas overnight or for at least 8 hours and keep aside.
2.Heat a pressure cooker and add oil. When hot add bay leaf,
cinnamon stick and crackle fennel seeds.
3.Add ginger garlic paste and sauté for few seconds till its raw
smell goes off. Also add finely chopped
onions and fry till they softens.
4.Now it is time to add all the spice powders one by one and keep sauteing.
5.Add finely chopped tomatoes and cook till they are mushy and
leaves oil from all the sides.
6.Add boiled chickpeas and mix very well. Also add salt as per
taste and lemon juice.
7.Take 9 whistles in medium flame and then simmer for 5 minutes.
Do not open the cooker immediately.
After 15 minutes open the cooker , mix again and serve.
8.This gravy is usually served along with poori, bhatura or phulka.
