Crispy Fingers


Crispy fingers is a easily preparable snacks and it is much loved especially by the kids. The stiff dough is prepared from semolina and mashed potatoes along with variety spices which are rolled like fingers and then deep fried. This dish is also a best snack to serve for kitty parties and other get together function at home.
I like this dish with homemade mayonnaise dip and it also tastes great along with tomato ketch up. Also do try my other snacks suitable for parties and get together such as bread potato roll, Vegetable Cutlet, French fries.

Ingredients:

Semolina / Bombay rava 1 cup
Potato 4 medium size
Bread Crumbs (Optional) 2 tbsp
Green chilli 2
Garam masala powder 1 tsp
Amchur powder ½ tsp
Turmeric powder ½ tsp
Red chilli powder 1 tsp
Cumin Powder ½ tsp
Coriander powder 1 tsp
Kasuri Methi crushed 1 tsp
Lemon juice 1 tsp
Coriander leaves finely chopped 1 tbsp
Salt to taste
Vegetable Oil for deep frying
Water 1 cup

Instructions:

1.Boil potatoes with the help of pressure cooker, peel off its skin and mash well.

2.In a vessel heat one cup of water till you get rolling boil and turn off the flame. 



3.Add semolina to this boiled water and mix well till it gets moist.


4.Close the vessel with plate for about 15 minutes. You can see rava in crumbled texture after opening the plate.

5.With the help of spoon press on crumbed rava gently all over and combine to form dough.

6.Take a mixing bowl and add mashed potatoes, semolina dough and bread crumbs and mix well. 


7.Also add finely chopped green chilli, coriander leaves and salt. Give a good mix.


8.Add all the powders mentioned under ingredients along with kasuri methi and lemon juice. Prepare stiff dough by mixing well.


9.Grease your palms with a teaspoon of oil. Take a small portion of the dough and with your greased hands shape them like fingers.

10.Keep greasing your palms whenever you feel stickiness of dough. Shape all the fingers and keep aside in a plate.

11.Heat a kadai with oil for deep frying. When oil receives sufficient heat reduce the flame to medium and leave one by one finger onto oil.


12.Do not flip them immediately let one side of the finger cook completely. Turn the fingers gently to fry evenly and remove onto absorbent paper when they are completely roasted till golden brown.


13.Serve hot crispy fingers along with mayonnaise dip, mint dip or with tomato ketchup.
