Mooli Paratha


Whenever I think about healthy breakfast ideas the first dish that comes to my mind is Parathas. Though aloo and paneer paratha is my favorites I prepare muli ke paratha as it is one of the best healthy breakfast dish. Preparing muli ke paratha is very very easy especially for office goers who will be in hurry in the morning hours preparing for their Tiffin boxes. Ingredients:

Radish grated 1 cup
Radish leaves finely chopped ½ cup
Wheat flour 1 ½ cup + ½ cup
Carom seeds / Ajwain (Optional) ½ tsp
Green chilli 1
Red chilli powder 1 tsp
Turmeric powder ½ tsp
Garam Masala powder 1 tsp
Coriander powder 1 tsp
Oil for cooking parathas
Salt to taste
Water to knead the dough

Instructions:

1.Peel off the skin of radish, rinse and grate it using grater. In a mixing bowl add grated radish and half teaspoon of salt. Mix well and set aside for 15 minutes.The grated radish will leave out all the moisture content so at this time squeeze out the water from radish either using your hand or with the help of muslin cloth. Retain this water for kneading the dough.


2.Before preparing for the stuffing keep the dough ready for making paratha. In a mixing bowl add wheat flour, carom seeds and salt combine once and start kneading the dough first by sprinkling water collected by squeezing grated radish and then by water in little quantities whenever required.


3.The dough should be of chapathi dough consistency soft and nonstick. Set aside until your stuffing is ready.


4.Now in a mixing bowl add squeezed grated radish, finely chopped radish leaves, finely chopped green chilli, all the spice powders along with salt one by one.


5.Mix everything properly and your stuffing is ready.

6.Take big lemon size dough into hand and with the help of rolling pin roll it out into a circle of 4 to 5 inch diameter.

7.Place a tablespoon of stuffing at the centre of the rolled out dough and bring all the edges into centre. 


8.Press it gently with your palm to give a shape of pattie.


9.Further roll it again by dusting the flour in between into a circle having 6 to 7 inch diameter.

10.Heat a tava on a medium flame and grease it with oil/ghee. When it is hot place the rolled paratha on it and allow cook till the small bubbles appear.

11.Drizzle some oil or ghee and flip to cook other side of the paratha until light brown spots appear.


12.Serve hot parathas topped with butter and with curd and pickles of your choice.

Note:

1.Do not keep stuffing for long time as grated radish will leave its water content.
2.Cook parathas in a medium flame so that stuffing can be cooked evenly.
