Masala Dosa


Masala dosa is a popular South Indian breakfast dish where a dosa batter is spread, sprinkled with lot of oil topped with red chutney and potato bhaji/masala and cooked till crispy. This is often served along with chutney and sambhar. The origin of this popular dish was by the Udupi hotels and later its popularity increased worldwide. Now we can find variations in masala dosa such as Butter masala dosa, Paneer masala dosa, Palak masala dosa and spring dosa’s. 
This is my all time most favorite breakfast dish and I prefer preparing it at least once in a week though it is a bit lengthy process. I do not like masala dosa along with sambhar so I have skipped here in this recipe. I have given links of the things that is required to prepare masala dosa instead of each ingredient.

You Need :

Oil for roasting dosa

Instructions:

1.Do check the highlighted link for the recipe of dosa batter, potato masala / bhaji and red chutney.

2.Prepare for dosa batter, potato masala and red chutney in advance. Heat a tawa to make masala dosa.

3.Meanwhile check the consistency of the batter it should not be too thick nor too thin. Add little quantity of water in case of thick batter.

4.When tava receives enough heat grease it with oil. Just before spreading the dosa sprinkle some water to the tava.

5.Now reduce the flame in between medium and low. Take a ladle full of batter and spread dosa in a large circular way and close with a lid.


6.After about 30 seconds open the lid and drizzle generous amount of oil. Also apply red chutney at the center part of the dosa.

7.You will get a nice aroma of red chutney in batter. When the dosa turns golden and crisp place a spoonful of potato masala at the center of the dosa.


8. Now start folding from one corner of the dosa till the other corner or in cone shape.


9.Serve hot dosa with chutney and sambhar.

Note:

To make thin and crispy dosa you need to follow these tips.
1. Once the dosa pan is hot keep the flame between medium and low.
2. Sprinkle generous amount of oil which helps in roasting.
3. You have to cook each dosa for about 3 to 4 minutes in a low flame which makes dosa crispy.
