Dosa Batter for Masala Dosa and Paper Dosa


I have tried to make restaurant like masala dosa several times but i didn't find any recipe as per my expectation. either the dosa turn soft or it will be tasteless. Then i got this recipe from one of the owner of restaurant at the place where i reside and this has fulfilled all my expectation. Really after following the proper measurement of the ingredients now i am able to make crispy delicious masala dosa just like the restaurants.
The same batter is also been used in the preparation of Paper dosa. Do try this recipe and let me know your experience in my comment box.

Ingredients:
Dosa rice 1.5 cups
Urad Dal 1/4 Cup
Tuvar Dal 2 tbsp
Fenugreek Seeds 1/2 tsp
Flattened rice a handful
Semolina 2 tbsp
Sugar 1 tsp
Salt to taste

Instructions:
1.In a bowl wash and soak in water dosa rice and fenugreek seeds together. In another bowl wash and soak two types of dal. Also wash and soak flattened rice in a separate bowl for at least 4 hours.

2.After soaking time is finished drain the water completely.

3.Using a blender or wet grinder first grind the rice with little quantity of water. When it is coarsely grounded add flattened rice to the dosa rice and continue grinding till smooth paste.



4.In a big vessel transfer the rice batter and keep aside till you grind the lentils.


5.Now again add all the dal's with water and grind till smooth paste along with salt.



6.Add this batter to the rice batter, also add semolina and mix well.



7.Allow it to ferment for about 12 hours. After the batter has fermented add little quantity of sugar and mix well.

8.Now your batter is ready to spread.
