Potato Masala or
bhaji is a great accompaniment to masala dosa. In South Karnataka region people
usually call it as Potato bhaji and other parts of Karnataka specially in
Bangalore, Mysore it is referred as Potato masala. Masala dosa without this
dish is like curry without salt. In Mangalore people love Potato bhaji as a
side dish to Poori instead of saagu which is a famous breakfast dish of this
region. This is a South Karnataka restaurant style recipe and i hope you will
like it.

Ingredients:
Potatoes 3 large size
Onion 2 medium
Ginger chopped 1 tsp
Green Chilli 3
Curry leaves few
Mustard Seeds 1 tsp
Urad dal 2 tsp
Cumin Seeds 1 tsp
Fenugreek seeds 1/4 tsp
Turmeric Powder 1/2 tsp
Oil 1 tbsp
Lemon Juice 1 tsp
Salt to taste
Coriander leaves for garnishing
Instructions:
1.Pressure cook potatoes taking 6
whistles or till they are cooked properly. Peel off its skin and roughly chop
them.
2.Assemble the required ingredients
mentioned above to make bhaji. Heat a kadai with oil and when it is hot reduce
the flame to low.
3.Add urad dal and roast till you get
nice aroma. Further add mustard seeds, cumin seeds, curry leaves and fenugreek
seeds one by one and keep sautéing.
4.Further add finely chopped green
chilli and ginger and let it nicely roast.
5.Now add quartered onion and allow
it to cook till it softens. By this time you can increase the flame to medium.
6.Just before adding the chopped
potatoes sprinkle turmeric powder and mix well.
7.Now add potatoes and salt give a
good mix. Pour two cups of water till it form a thick gravy consistency.
8.Close the lid and let the potatoes
absorb all the flavors. Keep checking in between as it may get burnt due to
evaporation of water content.
9.Cook for about ten minutes till it
form a thick mixture. Sprinkle some finely chopped coriander leaves and lemon
juice and turn off the flame.
10.Your potato masala/Bhaji is ready
to serve along with masala dosa and as a side dish for poori.
