Aalu Kachori



Aalu Kachori is a North Indian Snack/ Street Food which is prepared from potatoes as a main Ingredient. In Hindi Aalu means Potatoes and Kachori means fried Pastries. A filling of potato is prepared by adding different rich flavors of spices and filled inside a dough. Kachori's are deep fried and people usually like to have this either with coriander chutney, Sweet dates chutney or Sweet tamarind Chutney. I have preferred to serve along with Sweet Tamarind chutney here.

To Prepare Filling ::
Red Chilli Powder

Preparation ::










Preparing the Dough ::
  1. The first step in making of Kachori is preparation of dough.
  2. Sieve all purpose flour, baking soda and salt. Add 1 tbsp ghee/oil and mix again. Pour warm water and start kneading well.
  3. You should knead it until smooth and firm. Add remaining ghee and knead again. Cover with a damp cloth and keep aside for 30 minutes.

Preparing the Filling ::
  1. Soak green peas previous day in water or use fresh frozen green peas.
  2. Boil potatoes and green peas separately. Heat oil in a skillet in a medium flame and add cumin seeds, ginger garlic paste, mashed potatoes and green peas and keep sautéing.
  3. Add all the spice powders, gram flour and salt and mix. Turn off the flame when it is smooth and dry. Your filling is ready.

Preparing the Kachori's ::
  1. Take a large lemon size dough into hand and give a round shape. Repeat the procedure for rest of the dough.
  2. Divide the filling equally to the number of dough you prepared.
  3. Take a each dough using rolling pin roll into 3 inch diameter disc and place filling in the center. Cover the filling by bringing all the edges to the center and  by sticking the dough to each other. You can use water to stick so that your filling will not come out.
  4. Roll again to a large poori size by using rolling pin. You can also make it flatten by gently pressing them.
  5. Deep fry these pastries in a medium flame until crisp and golden brown.
  6. Serve hot Kachori's with coriander chutney, Sweet dates chutney or Sweet tamarind Chutney.

Note ::
For preparing the dough, instead of adding only all purpose flour you can add Maida + Whole wheat flour in the ratio of 60 : 40.
