- Wash the ladies fingers and cut into half inch size (See the pic above). Heat a pan add around 2 tbsp oil and roast the okra pieces with little salt in a very low flame. I suggest you to roast in non stick pan. Close with a lid and roasting procedure will take minimum 10 minutes.
- Keep sautéing in between so that the pieces should not stick to the pan. Once it is cooked properly it will turn into blackish green color. Remove the pieces onto plate and keep aside.
- Keep the other ingredients ready to prepare the yogurt sauce. Heat a skillet in a medium flame. Add remaining oil, when it is hot add mustard seeds, cumin seeds, curry leaves and dry red chillies (cut into half). Add finely chopped onion as well and roast the onion till golden.
- Add garam masala powder, coriander powder, turmeric powder and red chilli powder and saute for few seconds. Add Besan & salt and saute for about one minute.
- Turn off the flame and remove the pan from the stove. You have to add yogurt and stir well. Once it is mixed properly add roasted ladies finger and mix well. Heat the pan again in a very low flame for about 2 minutes.
- You can add water until you get a consistency of your choice. Normally this will be a thick gravy. Sprinkle the coriander leaves and turn off the flame.
- Serve hot along with poori's, Naan, Chapathi, Kulcha, All kinds of Roti's also as a side dish to rice items.
