Preparations :
- Prepare a dough by adding flour, carom seeds, salt and water. Knead well let it be a stiff dough. Add Oil and knead again for few minutes. Keep aside till your filling is ready.
- Using a pressure cooker boil potatoes and green peas and keep aside.
- Heat a kadai in a medium flame drop in 3 tbsp oil add chopped ginger and onion which you need to fry till golden.
- Add all the spice powders and saute well. Add mashed potatoes and green peas and cook them for few minutes.
- Also add kasuri methi, coriander leaves, salt and mix well. Your stuffing is ready.
- Divide the stuffing equally with the number of balls you prepared from the dough.
- Prepare the outer layer of the samosa by rolling the each ball using rolling pin. Let your circle be big and thick similar to chapathi.
- Using a knife cut at the centre and make it two. Take one half circle in to hands and make a cone shape. Use water to stick the other side of the dough.
- Take one portion of the filling and place inside the triangular dough. Bring one side of the dough and stick to the opposite and close all the edges.
- By doing this the base of the samosa's will stand properly which is an important step while preparing this delicious snack.
- Make sure it is sealed properly otherwise filling will come out while frying.Repeat the same procedure for rest of the balls and filling.
- Heat a deep frying pan add oil, once it is heated drop 2-3 samosa's and fry till they are crisp and golden brown.
- Remove onto absorbent paper and serve hot along with Tomato ketchup/ Mint chutney.
