Preparations :
  1. Prepare a dough by adding flour, carom seeds, salt and water. Knead well let it be a stiff dough. Add Oil  and knead again for few minutes. Keep aside till your filling is ready.
  2. Using a pressure cooker boil potatoes and green peas and keep aside.
  3. Heat a kadai in a medium flame drop in 3 tbsp oil add chopped ginger and onion which you need to fry till golden.
  4. Add all the spice powders and saute well. Add mashed potatoes and green peas and cook them for few minutes.
  5. Also add kasuri methi, coriander leaves, salt and mix well. Your stuffing is ready.
  6. Divide the stuffing equally with the number of balls you prepared from the dough.
  7. Prepare the outer layer of the samosa by rolling the each ball using rolling pin. Let your circle be big and thick similar to chapathi.
  8. Using a knife cut at the centre and make it two. Take one half circle in to hands and make a cone shape. Use water to stick the other side of the dough.
  9. Take one portion of the filling and place inside the triangular dough. Bring one side of the dough and stick to the opposite and close all the edges.
  10. By doing this the base of the samosa's will stand properly which is an important step while preparing this delicious snack.
  11. Make sure it is sealed properly otherwise filling will come out while frying.Repeat the same procedure for rest of the balls and filling.
  12. Heat a deep frying pan add oil, once it is heated drop 2-3 samosa's and fry till they are crisp and golden brown.
  13. Remove onto absorbent paper and serve hot along with Tomato ketchup/ Mint chutney.
