Preparations:
- wash rice and soak in a water for twenty minutes. Drain all the water and keep aside.
- In a small pan add few drops of ghee and fry raisins, cashew nuts and onion separately till golden.
- Heat a pressure cooker in a medium flame add remaining ghee, once hot add bay leaf, cinnamon stick, cloves and cardamom. Allow to splutter, add green chillies which is slit into length wise and add drained rice.
- Saute on a low flame for 3-4 minutes and roast the rice. Do not skip this step and do not over roast.
- Add garam masala powder and salt and mix well. Pour the water till one inch above the rice and cook the rice taking two whistles(depending upon your cooker).
- Once all the steam goes off open the lid and garnish with caramelized onion, raisins, cashew nuts and coriander leaves.
- Serve along with Paneer Masala, Kaju Masala, Chicken Gravy's or any of the gravy's of your choice.
