Preparation ::

Break the cauliflower in medium size florets. Heat water in a vessel for 10-15 minutes. Remove from the flame and add a table spoon of rocksalt. Place cauliflower florets in water for 20 minutes. This is the way how I clean florets. Wash them nicely and drain.

Frying the Florets ::
  1. You need to fry the gobi florets, so the first step is preparing the batter for frying.
  2. In a bowl add All purpose flour, ginger garlic paste, red chilli powder and salt. Seive them, add enough water to prepare the batter. The consistency should not be too much thick nor too much thin. It should be medium.
  3. Heat oil in a frying pan. When it is ready to fry dip each florets in to batter and leave one by one. Fry the florets in a low flame so that inner side will cook properly. It will take atleast 15 minutes to fry one batch.
  4. Remove onto absorbent paper when it is crisp and golden. Fry all the florets batch wise and keep aside.

Preparing the Manchurian ::
  1. Heat a wide pan add oil, finely chopped garlic, green chillies(Slit into two) , onion and capsicum. Fry in a low flame till onion turns golden and capsicum is partially cooked.
  2. Meanwhile add a cornflour in a small bowl and add water. Make a fine thin paste and keep aside.
  3. Add salt, tomato sauce, soya sauce and chilli sauce and keep sautéing. Check for the saltiness and add salt if required.
  4. Add fried gobi florets and mix well. The sauce should be nicely mixed with gobi. Pour corn flour paste all over and saute without leaving hand for about 2 minutes.
  5. Sprinkle chopped coriander leaves, chopped Spring onions, lime juice  and serve immediately. You can eat this plain with tomato ketchup, chilli sauce or schezwan sauce. You can also serve as a snack or as a side dish for fried rice and hakka noodles.
