Preparation :
- Wash kokum well in water and place in a plate.
- Boil one cup of water and add kokum in it. Boil for about 10-12 minutes , the kokum start leaving its color to pink. Do not boil more as it may turn to bitter. Let the kokum water cools completely.
- In a blender put grated coconut, garlic and green chillies and add a cup of water. Grind well and collect the coconut juice in a bowl using a strainer. Repeat this procedure another time.
- Add this coconut milk to the cooled kokum water. Adjust the coconut milk to the desired thickness of kadi.
- Add salt and asafoetida and mix well. Garnish with coriander leaves and serve after lunch/dinner.
- You can remove kokum pieces after a while.
Do not add coconut milk to hot kokum water as it may get
split.
