Preparation :
- Cut Brinjal into thin round slices, wash well and add red chilly powder and salt.
- Mix properly and keep aside for 10 minutes.
- Prepare a chickpea flour batter by adding asafoetida, cooking soda, carom seeds and water.
- The consistency should be thick and there should not be any formation of lumps.
- Heat oil in a kadai, dip each brinjal slices into batter and drop them into oil.
- Fry both sides of the brinjal and make it crisp golden brown.
- Drain on absorbent paper and serve hot.
