- Peel off the skin of 2 ridge gourd, wash well.
- In a deep pan add 3 tbsp oil, 1 tbsp mustard seeds once it crackle add 1/2 tbsp cumin seeds, 8-9 curry leaves, 1/4 tbsp asafoetida.
- Add skin of ridge gourd, salt and 3 green chillies and pour 3/4 cup water. Close the pan with a lid and let it cook.
- Once it cooks add 1 cup grated coconut and saute well for few minutes.
- Let this mixture gets cool. Grind the mixture using very little water along with 5-6 fried dry red chillies and tamarind.
- Grind to a fine thick paste. Take into a bowl and serve as a side dish for lunch/dinner.
Note:
Reduce the quantity of green chilli if you like less spicy.
