- Peel the potatoes chop them lengthwise like french fries. Wash them well, drain and keep aside.
- In a small frying pan drop two tbsp oil and roast mustard seeds, fenugreek seeds, asafoetida and dry red chilli's saperately.
- Using a blender prepare a masala by grinding all roasted ingredients above along with grated coconut, tamarind and turmeric powder.
- Use very little water to grind to a fine paste. After keeping masala in a bowl add a glass of water into blender and retain the masala water in another bowl.
- Heat a kadai in a medium flame add remaining oil and fry chopped potatoes for 2-3 minutes.
- Add salt and masala water and close it using a lid. Allow potatoes to cook for few minutes.
- Add the grounded masala to the 80% cooked potatoes and saute for 2-3 minutes. Let all water content gets dry.Your dish is ready to serve. Garnish with coriander leaves.
- This is a spicy dry curry and taste good with Dosa's also along with rice and dalitoy.
