Preparations :

Frying the Idli Pieces :
  1. Refrigerate Idli's for half an hour which helps you to cut it easily.
  2. Boil one glass of water in a vessel and put dry red chillies. Let it soak for one hour, and prepare a smooth chilli paste.
  3. Prepare the batter in one bowl by adding  Maida, cornflour, salt, chilli paste, garlic paste and water.
  4. Cut Idli's into small cubes. In a frying pan heat oil, dip idli pieces into batter and fry till golden brown and crisp. Drain on absorbent paper and keep aside.

Preparing the Manchurian :
  1. In a nonstick pan add oil saute green chilli's (slit into half) for few seconds, add ginger garlic paste and onions till golden brown.
  2. Add chopped capsicum saute for 2-3 minutes. Add salt, tomato sauce, soya sauce, chilli sauce and mix well.
  3. Sprinkle lime juices and mix again. Garnish with coriander leaves and serve hot.

Note :

While preparing the batter you can also add chilli powder instead of dipping dry chillies in hot water and grinding. The reason to use Dry red chilli is it gives very good color to your fried idli's and can use as a substitute for artificial food colors.
